Now that New Year’s Eve has come and gone, people won’t be thinking much about sparkling wines unless there is another event to celebrate. But why should this be the case? Recently I returned from a whirlwind tour of some of Germany’s wine making areas. Besides the beautiful countryside and castle around every turn, I was impressed with the variety of wines made in that country. Like other counties of Europe, Germany has a long history of wine‐making, in fact, they have found evidence of organized Roman wineries dating back 2,300 years ago. Aurora Wines and Spirits is donating wine to the Heartland Cooking Series of classes at the Minnesota Landscape Arboretum. I have had the privilege of working with the teachers and choosing the wines that will be served at each session. Because the purpose of the classes is to teach cooking methods using local and regional foods, often there is a bit of a challenge to choosing wine that will pair appropriately with the dishes being prepared.
